Extreme5 of 5Naga Bhut Jolokia, originally from India and known elsewhere as the ghost pepper, is the legendary variety that first broke the million Scoville line. This flake is a plain, direct choice when a dish needs extreme, lingering heat.
There is more here than the burn. Under it sit deep earthy notes, something faintly floral, and a sweet fruitiness. Because the flake is exceptionally hot, start with far less than feels right. A small pinch will electrify a large pot.
It suits slow-braised stews, hot soups, homemade chili sauces and dry rubs that are meant to have a real kick.
